Chicken garden minestrone is one of my favorite soups, actually, it is a favorite of a lot of people I know. Delicious chicken broth, fresh vegetables, chicken, and noodles, this rustic chicken garden minestrone recipe is absolutely delicious.
Delicious Chicken Garden Minestrone Soup Recipe
While the photo may look underwhelming, don’t let looks deceive you. This soup is flavorful and delicious! I am just the world’s worst photographer, though, I’m working it….slowly.
Why do I call this chicken garden minestrone soup recipe a magical healing soup? Well, because my husband does.
This soup recipe isn’t just great for cold days, but for colds too. This is the soup I make whenever anyone is sick and I, along with my husband, and number of friends have a firm belief that that this delicious garden minestrone soup will make anyone feel better.
I made a small batch recipe in the pictures, but a full batch takes more veggies and is still as good.
Ingredients Needed To Make This Amazing Chicken Garden Minestrone Soup Recipe:
- 5-6 Carrots washed
- 4 Pieces of Celery
- 1 Small Sweet Onion
- 3 Roma Tomatoes
- 4-8 Cloves of Garlic*
- 48 oz Chicken Broth
- 2 Cups water
- 1lb Chicken Breast
- Salt/Pepper
- Chicken Boullion
- Spinach
- Noodles (You can use shell or egg noodles)
- 1 can white northern beans
Note*:
For a regular batch 4 cloves of garlic should be good, unless you just love garlic. If anyone is sick, I generally a LOT more garlic.
How To Make This Comforting Chicken Minestrone Soup Recipe
Step 1
Dice your onions and slice your carrots, garlic, and celery.
Step 2
Heat up your olive oil in your pan and then add your vegetables.
Step 3
Once your vegetables become fragrant and begin to soften add your tomatoes and let them cook down.
Step 4
Once the tomatoes are cooked down add your broth and let it simmer until the carrots are soft. Add your bullion cube. I like Knorr, they’re very flavorful. About 40 minutes or so.
Step 5
Dice up your chicken breast.
Step 6
Add a drizzle of olive oil to a skillet and add your chicken breast and seasoning. I added Tony Chachere’s.
Step 7
Once the chicken is cooked through, put to the side. This goes in last. We don’t want dry chicken in the soup.
Step 8
Once the carrots are soft add your noodles add 2 cups of water to your soup and noodles. Don’t add the whole pack of noodles only about 1/4 to 1/2 depending on how noodly you like your chicken garden minestrone soup.
Step 9
Let the noodles simmer until soft and then add your spinach. For a full batch use a whole bag. It’ll take a minute for it to cook down.
Step 10
Add salt and pepper to taste. Serve with warm rolls or biscuits!
How To Store Your Chicken Garden Minestrone Soup
A full batch of this soup usually feed my family for 3-4 days. It makes a lot. Before you store your soup make sure that you let it cool fully. Adding hot food to the fridge is never a good idea.
Also, be aware the noodles will soak up liquid, so you may need to add liquid to the soup when you eat left overs.
It does best in an airtight container, but can be frozen in baggies in the freezer as well.
What Is The Difference Between Chicken Garden Minestrone Soup and Chicken Noodle Soup?
You may be wondering how this minestrone differs from chicken noodle soup. They’re very similar in the broth, carrots, celery, and chicken. However, this soup recipe incorporates more veggies! Tomatoes, garlic, onions, and spinach make this soup more unique.
Did you know some people even add beans to their minestrone recipe?
But all the vegetables are what makes this soup so healthy.
The Get Better Soup
While my husband calls it the magical healing soup, I like to call it the get better soup. It may not instantly cure whatever ailment you have, but the fluids, the salt, and the vegetables are must when you’re feeling under the weather.
Our diets are the first step in healing and overcoming illness and sometimes we just need to aid it by giving it the proper fuel.

Delicious “Sick” Soup with Chicken and Vegetables
Ingredients
