I know, it may seem intimidating if you’ve never made a roast. But this slow cooker balsamic vinegar roast beef is actually super easy to make. You put it in a slower cooker and forget about it and then make glaze for roast beef and carrots.

And the flavor profile of this balsamic beef crockpot recipe is very pleasant. I was initially afraid of it being too sweet or too vinegary, but it isn’t. It’s slightly sweet, salty, and savory. A perfect combination, my family LOVED IT!

How To Make This Delicious and Tasty Slow Cooker Balsamic Roast Beef Recipe

Peel and slice up your onions to place on top of your slow cooker roast beef.

Step 1

Slice your onion up first and foremost. They don’t have to be pretty.

Step 2

Lay your carrots down at the bottom of the slow cooker. Then place your roast on top.

Step 3

Add your seasoning and onions on top of the roast, and then add the stick of butter on top.

Step 4

Turn your slow cooker on low and let it slow cook for 6-7 hours until you can shred the roast beef by the fork.

Step 5

Once the roast is finished shred it and spoon all the carrots out.

Step 6

Put all the drippings in a bowl and add ice cubes. It’ll seize the fat up. Spoon out all the fat and ice and use the beef drippings for the sauce.

Your roast beef balsamic glaze will need some brown sugar for sweetness and thickness.

Step 7

Add the beef drippings to the pan. Then add the broth, Worcestershire sauce, soy sauce, balsamic vinegar, and brown sugar, and stir until well mixed.

Step 8

Add the cornstarch and cold water into a separate bowl.

Step 9

Slowly pour the cornstarch mixture into your balsamic vinegar mixture and mix vigorously until thickened.

Step 10

Once thickened add the roast beef and carrots into the balsamic mixture and stir until coated.

Serve your balsamic vinegar roast beef with the roasted carrots!

Cooking Notes:

If you’re allergic to soy sauce like me, I made a substitution. Instead of soy sauce I used a couple dashes of Accent (I’m not afraid of msg) and 2 tablespoons of water.

If your sauce isn’t thick enough, if you added too much liquid, add another tablespoon of cornstarch/water mixture. Or if your balsamic vinegar roast beef glaze is too thick then add more liquids. Beef broth or water will work.

Slow Cooker Balsamic Roast Beef Recipe

Delicious slow cooked, tender, fall apart roast beef, with a sweet balsamic glaze and roasted carrots! The whole family will love it.

Ingredients

  • 3-4 lb Chuck Roast
  • 1 Yellow Onion
  • 1 Packet Hidden Valley Ranch
  • 1 Stick Butter
  • Baby Carrots Package
  • 1/2 Cup Balsamic Vinegar
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Worcestershire Sauce
  • 2 Tbsp Cornstarch
  • 2 Tbsp Water
  • 1/2 cup Beef Broth
  • 1/2 cup Beef Drippings

Instructions

  • Clean and slice up the yellow onion and set aside, this goes on top of the roast.
  • Lay your carrots at the bottom of your slow cooker and then add the roast on top, your seasoning, onions, and stick of butter.
  • Turn your slow cooker on low and let it cook for 6-7 hours or until the roast is easily shredded with a fork.
  • Once the roast is finished shred it on a plate and remove the carrots from the slow cooker.
  • Put all the drippings in a bowl and add ice cubes. It'll seize the fat up. Spoon out all the fat and ice and use the beef drippings for the sauce.
  • Add the beef drippings to the pan. Then add the broth, Worcestershire sauce, soy sauce, balsamic vinegar, and brown sugar, and stir until well mixed.
  • Add the cornstarch and cold water into a separate bowl.
  • Slowly pour the cornstarch mixture into your balsamic vinegar mixture and mix vigorously until thickened.
  • Once thickened add the roast beef and carrots into the balsamic mixture and stir until coated.
  • Serve!
