Preheat your oven to 275F.
Lay out some tinfoil and spray it with cooking spray or whatever oil you use to keep stuff from sticking.
Lay out your meat. I don’t trim, I leave all of it as is, it gets tender enough the silver skin isn’t an issue. You can cut it off if you want.
Season your meat. I don’t measure for this. I just season the top well.
Drizzle some BBQ on your meat. We want the sweetness, smokiness, and acidity to permeate the meat while it cooks. It makes it flavorful and tender.
Put more tinfoil on top and roll the sides to make a pouch around the meat.
Cook for 3-3.5 hours or until the meat is at least 190F.
Rip the top open on your ribs, and put a healthy dose of BBQ on top, spreading it out.
Put the broiler on low and let the BBQ get nice and sticky on top of the ribs. Keep an eye on your ribs so the BBQ doesn’t smoke or burn.
