The chicken is also super tender. This healthy dinner recipe is also fairly quick to make. Put it on a sheet and stick it in the oven and bam! Dinner! Deliciously Easy Sheet Pan Mediterranean Chicken Recipe

You’ll need to stir the ingredients together put on the chicken and chopping veggies is all you’ll have to do with this sheet pan chicken recipe. The best part is you can swap out all these veggies for your favorite veggies, but this sheet pan Mediterranean chicken recipe is so good and healthy, especially for your cholesterol. Yes, it has chicken, but it has less cholesterol than a lot of other meats if that is something you’re worried about. Plus, it’s a budget-friendly recipe! Plus, if you like Greek flavors, then you’ll love this recipe! It’s a regular meal we eat in my house.

Ingredients Needed To Make This Tasty Mediterranean Sheet Pan Chicken Recipe

  • Olive Oil
  • 3 Tablespoons Lemon Juice
  • 4 Minced Garlic Cloves
  • 2 Teaspoon Dried Oregano
  • 5 Tablespoon Dijon Mustard
  • Salt
  • Pepper
  • 4 Chicken Quarters
  • Zucchini Sliced
  • Squash Sliced
  • Red Onion Sliced
  • 1 Carton Cherry Tomatoes
  • 1 5oz Jar Kalamata Olives

Recipe Notes:

Okay, so I’mma be honest, this is a guesstimate of how much mustard. With most of my recipes, I cook and measure with my heart.

How To Make This Super Yummy Mediterranean Sheet Pan Chicken Recipe

Step 1

Preheat your oven to 425 F.

Step 2

Chop up you zucchini and squash and slice up your onions. Also, go ahead and mince you’re garlic while you’re doing this.

Step 3

Mix 5 tablespoons of Dijon mustard with 3-4 tablespoons of olive oil, mix in a healthy pinch of salt (like 1/8 teaspoon) and add the same amount of pepper. Now add you oregano and garlic as well.

Place your sauced chicken on top of the bed of vegetables.

Step 4

I always put foil down on my sheet pan and I spray with non-stick spray.

Step 5

Add your vegetables to your sheet pan and your jar of drained olives and your rinsed off cherry tomatoes.

Step 6

Drizzle olive oil over your veggies and sprinkle them with salt and pepper.

Step 7

Put your chicken quarters on top of your veggies and brush the sauce on top of the chicken.

Step 8

Bake your chicken for about an hour. It took my oven an hour to cook the chicken. The temperature in my oven is a little off, so may want to check your chicken at the 45 minute mark and go from there.

Notes:

Chicken legs and thighs should be 175 F and the juices should run clear.

You can also add think slices of potatoes to make this sheet pan meal a little more hearty. I’ve done it and it’s so flavorful.

How To Store Your Mediterranean Sheet Pan Chicken Leftovers

If you have leftovers, put it in a Tupperware or another airtight container. You will want to eat it within a few days of cooking it so that the veggies don’t get too soggy. I’ve eaten this recipe 3-4 days after and it tasted great! So, if you’re meal prepping for a few days, this recipe works out great!

This Mediterranean sheet pan chicken is delicious, simple, and healthy. It has a chicken quarter that is baked and seasoned with roasted squash, zucchini, cherry tomatoes, red onions, and Kalamata olives.

Ingredients
  

  • Olive Oil
